Gone are the usual suppers back in SG, a 'zhi-zhar', or a frog legs congee, or even 24hrs McDonald's. It's not easy to find food in Paris after the usual dining hours, so I made a bit of fish soup yesterday, kept in my fridge, and just heated up to have with a glass of Chablis, some good baguette, and Damien Rice.
My own recipe:
Take 2 small filets of white fish, lightly fry them in some olive oil, remove, add some chopped leeks, shallots and little garlic, when soft, deglaze with some white wine, add some stock, bay leaf, thyme, tarragon stems (the leaves you will use later), and reduce to a fragrant broth, add some cream, bring to a boil, put the filets back in, lightly break them up in smaller pieces, possible to thicken the soup with some beurre-manié, season with salt, pepper, add chopped parsley and tarragon leaves. Optional, light squeeze of lemon.

yeah? it looks very 'bonne mamie', i don't know the origins, it's left here by the landlord, i took a furnished rental.
