
When I'm overseas and missing food from home, the first thing that comes to my mind is : Congee. Whether the plain type, to have with small side dishes (Teochew porridge), or the type flavored with pork/prawns, etc, ginger, coriander leaves and fried shallots.
Today was one of those days!
Boil rice in water until soft, put in some sliced ginger, minced pork flavored with pepper/soy sauce, cook through, top with coriander leaves, ginger, and thinly sliced fried shallots, pepper.
